Ingredients:
- 2 cups of rice flour
- 1 cup of urad flour
- Salt
- Water
- Oil (any type)
- 2-3 white potatoes (or any other type)
- 1/2 an onion
- 1 green chili pepper
- A pinch of fenugreek (methi) powder
- 1/2 tsp of turmeric powder
- 1 twig of curry leaves
Steps:
For dosa mix:
- Combine rice flour, urad flour, about a tsp of salt, and water in a bowl until the mix has reached the same consistency, adding water when necessary.
- Leave the mix out for 1 day to have it be raised and turn a little sour.
For masala mixture:
- Peel the skin off the potatoes and chop them into smaller pieces.
- Add chopped potatoes and about a tsp of salt (or to taste) in a pot with some water and let it cook until potatoes become soft and are a bit easy to mash.
- Peel the 1/2 onion and slice them into smaller pieces.
- Remove the stem of the green chili and chop it to smaller pieces.
- In a frying pan, fry onions and green chilis in some oil until it has reached a golden-brown tinge color. Then add the spices and leaves and combine them all together.
- Add onions with the cooked potatoes and combine them all well together.
To make the dosas:
- Coat a frying pan with some oil and let it heat up a little bit.
- Take a big spoonful of dosa mix and pour it onto the middle of the frying pan and with the bottom of the spoon, spread that mix in a outward spiral direction until the spread has made into a circle.
- To make it crispy (optional): As it cooks, you can add a few drops of oil on the outer sides of the dosa spread and a bit in the middle.
- Once it seems to be cooked, add masala mixture on one side of the dosa. Then flip the other side of the dosa onto the masala mixture side; closing that side.
- Flip the masala dosa when necessary until both sides are a golden brown color.
- Serve onto a plate and enjoy!
